Before I had a blog, I almost never baked or made sweet stuff. Mainly because I didn’t really know too much about it. I studied Culinary Arts; and Baking & Pastry was merely a 3 week course within that degree. There is good and bad to it.
The good thing is: I am learning a lot more about sweet stuff.
The bad news is: I am learning about the sweet stuff!
I am making it more often, and let’s face it: sugar is addicting. Luckily, I try to stay active at the gym, but there is definitely a balance that has to be made.
I don’t however, apologize for this post in the least, because I am obsessed with peppermint patties. These are homemade, inspired by one of my favorite candy shop’s blogs Oh Nuts Blog. I like that these have FAR less ingredients and you can make them as minty as you like. Enjoy!
Homemade Peppermint Patties
- 2 1/4 cups Confectioner's sugar (powdered) (more, if it gets too sticky)
- 2 Tablespoons unmelted coconut oil (can use butter)
- 3 teaspoons peppermint extract (can add more or less)
- 2 Tablespoons cream
- 12 ounces Melting wafers (I used chocolate chips)
Beat the sugar, oil (or butter) cream and peppermint extract until well combined. This may take a while and you may need to add more sugar if it seems too sticky or wet.
Roll into a long log and wrap in plastic wrap and place in the freezer until it hardens. (approximately 20-30 Minutes
Meanwhile, melt the chocolate in a bowl. Remove the peppermint “log” from the freezer and slice approximately 1/4 inch thick.
Dip into the melted chocolate using a fork and place on parchment or wax paper. Allow to harden either at room temperature or in the fridge.
Devour without shame!
