Canteloupe Coconut Smoothie
2 TB cream of coconut
1/2 cup diced pineapple
3 cups diced cantaloupe
1 cup plain or vanilla yogurt (frozen is better) Add greek for the protein!
1/2 cup milk (I used fat free)
1/2 cup crushed ice
2. Slice what I call “planks” across the fruit. Then, turn it around and cut long strips about 1.5 inch wide. Turn it around again and cut into cubes. I know, it’s just going into the blender…so why bother? Knife skills that’s why! Unless you are in a serious rush (and then why enjoy cooking in the first place) you shouldn’t miss an opportunity to work on your knife skills, because contrary what you may think now as you tirelessly practice your slices and dices – It does get better!
3. Put milk, yogurt, cantaloupe, cream of coconut, pineapple in the blender and puree until completely smooth. Taste as you go. (Not just for flavor, but for consistency)
